The main course began with Tamarind Fish, a South Indian delicacy served with Coconut Barley & Cashew Pakoda was a stellar. Chef Rana has used Red Snapper, which he gets twice a week from Kochi. The tangy taste of the fish was nicely balanced with creamy barley. Next on the table was Stuffed Morels with Tandoori Chicken & Malai Curry. The meaty flavour of morels gelled with the tandoorichicken and with Malai curry, it reminded of famed Butter Chicken. The Boondi Kadhi with mashed potato & quinoa onion rings was a leaf out of Chetan Bhagat’s novels – a union of flavours of North & South India, Punjabi Kadhi with onion rings made in South Indian style.
The last course was of desserts. Keeping the tradition of Mango season alive, Fresh Mango Pavlova was an amazing showcase of creativity. Mango Srikhand air, Mango Ice & Aam Pappad added a drama to a regular dessert. You will get three different textures united by one mango flavour. Next dessert was Gobindo Bhog Kheer. A traditional Bengali dessert – Chaler Payesh was dressed with strawberry & mango sorbets, nuts & air-dried fruits, giving it a colourful look and contrasting flavours.
It was a one of the most imaginative and unique dining experience as I was amazed by the way food can be so creatively presented. The Chef has done a commendable job of taking traditional Indian recipes giving it a modern avatar retaining the traditional flavors. The food is as global as one can get in the New York(s) and London(s) of the world with the use of innovative cooking techniques and use of ingredients.
