It seems Kashmiri food has filled Delhi with its presence. I attended three festivals at different hotels over a month. Each of them were unique and had different themes. The ongoing Kashmiri Wazwan food festival at Tamra, Shanrila-La is serving Kashmiri muslim  food.

I have been very regular to Tamra and in my opinion it offers the best buffet in town, including the Sunday brunch. They have done some great promotions in past and this is the first after New Year. They brought waza (people who cook kasmiri food) from Kashmir. Any Kashmiri cuisine whether it’s Muslim or pandit is incomplete without tabak maaz( kabargah for Kashmiri pandits). The ribs of goat marinated in spiced yogurt, simmered in saffrom milk and then deep fried, is probably one of the finest appetizer in meat.maneesh srivastva, lifestyle blogger and photographer, urbanescapades.in, kashmiri food festival, tamra , shangrila

The right selection of meat decides the fate of a dish – Especially when it comes to curry. The ongoing kashmiri wazwan festival at Tamra which never fails to amaze me has got some great meat dishes. Chef Tyagi shared that sourcing and marinating it right and infact fresh meat has done the all the wonders.

After gorging on tabak maaz( I repeated my order 😛 ) I moved on to try their main course. I had gustaba , a traditional minced mutton ball curry cooked in a yogurt curry and rishta  – meat balls ( hand pounded keema ) cooked in spicy tomato gravy with rogan josh and plain rice.

It’s heaven for meat lovers. You get to taste the real meat which otherwise in some of north Indian cooking, gets overpowered by spices. I simply loved dhaniya wala mutton, cooked with fresh coriander.

Tamara never fails to impress me and this was excellent as usual. I went on a weekday and the restaurant was buzzing. Well, it always is and that also shows loyalty of customers towards this place.

The festival is on till 12th of this month and if you are a meat lover, you shouldn’t miss this.
