Many restaurants categorize Indian cuisine into region-specific categories like Punjabi, Bengali, Parsi, South Indian, etc.. Over the years we have grown our love for South Indian cuisines and each Indian state in southern India has its own local specialty and based on it, there are a lot of restaurants that serve the food from different states of southern India. South Indian cuisine is particularly famous for dosas, vadas, idli, Uttapam, coconut chutney, and sambar. The regional diversity also includes bisibelibhat, chicken chettinads, appam, meen moilee, neer dosa, Malabar paratha -the list is endless.

Each state has its own specialty and spice level. Andhra has the highest spice level and Kerala has more spices.

Our lunch at Saffron at Trident where Chef Satheesh came especially from Trident Kochi to serve us food from different regions of South India. Chef’s focus has been on Tamil Nadu, Andhra, Kerala, and Karnataka and he carefully picked up dishes from these states.

Meen varual (fried fish with mint yogurt) and Lamb Chukka (lamb stir-fried with shallots and fennel pickled) was my favorite in appetizers.

And then came Kerala Moplah biryani, perhaps the most flavourful biryani in the country and it was perfectly cooked, with the balance of herbs and spices and a little bit of smokiness. It was delightful!

Elaneer payasam was the perfect way to finish the meal – coconut milk cooked with fresh tender coconut.

While a thali is served during lunch, dinner will be a-la-carte. This festival shouldn’t be missed. Food is excellent and service at Trident is exceptional. The team is very co-operative and hospitable.

Our lunch was very pleasurable with Fatima (The new Marcom). We chatted over the food and stories of Lucknow just got better, and we spent the whole afternoon enjoying the meal and great conversation. Fatima – Looking forward to seeing you again! Thank you for your warm hospitality!
