As I mentioned in my previous review<\/a> that it was refreshing to eat Punjabi food minus dal makhni and butter chicken. This time it was at Dilli 32 at The Leela Ambience Convention Hotel where Executive Chef Rohit Tokhi and Chef Ashwini Kumar Singh initiated an interesting concept and the first part of this whole story begins at Amritsar.<\/p>\n

GT Road we all how important it was from trading point of view. Some of these traders were cultural carriers as well. Food being an integral part of any culture, these traders carried their cuisine that got mixed with local cuisines.<\/p>\n

Coming back to Chef Ashwini, I now know him for little over a year. He is one of the finest Chef of indian cuisine. His passion, knowledge, attention to detail and perfection can be seen at Dilli 32, if you visit this place for dinner. Dilli 32 serves mix of Awadhi and rampuri cuisine and it\u2019s without a doubt best in town.<\/p>\n

As part of the series which will run in parts, the first being at Amritsar. Amritsar is known for its richness of traditional food. Whether its amrtisari machi, kanji, lassi, fried\/grill chicken, amritsari kulche, sarson ka saag or aloo wadi and many more, each dish is mouthwatering.<\/p>\n

For Chef Ashwini, I was not only curious but excited too; to see the way he will work on Amritsari cuisine. Given the fact that Awadhi is more refined, has finesse and is delicate, Chef Ashwini created his magic and bowled me over!<\/p>\n

<\/a>Food at the ongoing Amritsari food festival is rustic, delicious, flavourful and very close to what you get in Amritsar. Another interesting fact that needs to be shared – Vegetarian food for me was highlight of the day -. Aloo wadi ki sabji, mutter paneer, langer wali daal, sarson ka saag and the kadhi. If you are vegetarian then it\u2019s something you shouldn\u2019t miss and you don\u2019t have to go to Amritsar for these delightful dishes, as they are being served, right here at Dill 32.<\/p>\n

Non-vegetarian people would love this place too! Mutton and chicken curry both made in excellent thin gravy as we eat at home and is very flavourful. Lawrence road ki mutton boti- shouldn\u2019t be missed at all; Amritsari fish has very balanced spices; Chicken tikka was moist and well cooked; . Keema kaleji and mugaz were delicious \u2013 Each dish is very tempting.<\/p>\n

The gajrela (little different from the traditional gajar ka hlawa) and flat gulab jamun were perfect to end the scrumptious meal.<\/p>\n

I can\u2019t wait to go there soon again!<\/p>\n
