Varq has been doing great food promotions these days. Recent one is the forgotten dishes from four royal kitchens of the country, and one of them being royal kitchen of Mewar.

Mewar has been the centre of power of rajputs, though it also has lot of influence of Mughals, which also reflects on their food. Mewar has both veg and no-veg food. Source of Non-veg food was mostly through shikaar(hunting) .

Varq is hosting a 2 week long food promotions where they are showcasing six course sample menu from the kitchens of Mewar.

One thing which is very clear that if you talk about Indian cuisine you can’t miss the various cuisines that we have of Rajasthan.

Chef Rajesh Singh is four months old at Taj He shared that his all experiences at various leela hotels added to his tenacity on Indian cuisine.

The idea of presenting mewar cuisine surfaced as he had spent quality time in Rajasthan and studied their cuisines very closely.

DHUNGAR MAKKAI KA RAAB (smoked corn soup)

Meat being an integral part of Mewar Cuisine and mostly came from shikar, the preparation is very different. One of the most famous meat preparation is khad maas, where shikar meat is cooked under the sand. He shared that since it was not possible to cook in traditional way, he got real sand and wrapped the mutton and then cooked in the oven.

Khad murg is something which you shouldn’t miss at the festival along with it, is the highly recommended is khooba rot. This is, little crisp and dry from the usual roti as the dough is prepared without using water. Safed mass is another star dish where the lamb is cooked with sweet and sour guava, very different from our regular lab dish, but absolutely delicious. You will also love passley angeela, lamb chop cooked on charcoal – soft, moist and succulent chops. The panchmel dal (5 different lentils) and mangori pulao will definitely wow vegetarian lovers.
