I am yet not sure how long it will take to open hospitality industry and also not sure what would be the future of dining.

Covid-19 pandemic has literally closed down the entire world. When lockdown was announced, we were not sure of how to handle the situation as we had not experienced anything like this before! However, slowly and steadily we started coping with this. I placed my time cooking food for my family. Even though I don’t cook variety of cuisines but I somehow managed to cook lot of food.

I also tried my hand at pasta and other stuff and they came out really good. Now I focus a lot on trying dishes from different cook books that I collected over the years. My focus and interest area is only on regional food of our country. I recently picked up some dishes from the book ‘Prashad’. One of the best things about this book is that it is very precise and accurate. The bharta which I cooked came quite well. The chicken masala, butter chicken and dal makhni were fantastic too. Well, this isn’t about my cooking skills, but if you trying anything knew and the recipe doesn’t call out things clearly, you may end up with some mess!. There are some great you tube channel too where recipes are explained in a very simple way. I am hooked to nishamadhulika. I have also been following her channel for multiple dishes that I wanted to cook. I have also realized that there are many basic things which I am not familiar with. For example baking – which when I tried couple of years back had not been very successful and I didn’t further work on it. Even though I am not a fan of breads and I hardly eat them, but during the lockdown I had major craving for pound cakes and thanks to my local departmental store I managed to get it. But I have decided that once everything will be normal, I am going to focus a lot on baking and plan to register for course as well. I also cooked at lot of food which are from my state Bihar and Jharkhand. I have also tried my hands on our famous mithais. Everything, so far, has been good.

I also intend to visit khurja and buy some plates and bowls for my food plating. This is another area which will need my focus. I am also planning to buy a nice chopping board for myself and set of knifes too
I am now very keen to focus a lot on food photography and will restart using my DSLR.
I think after the lockdown down I might focus a lot on eating healthy and home cooked food.  Whenever I will go out I will prefer to visit those places which are good in terms of hygiene and follow safety standards. I am yet not sure how long it will take to open hospitality industry and also not sure what would be the future of dining. I am speaking to lot of people and trying to figure out what the future of eating would be. I will try and cover in next story where the focus will be cleanliness and hygiene. Italian and Japanese should become even more popular after this in my opinion because as the cuisine in itself is healthy and light. I plan to enhance my skills in these cuisines too.
